			<description>10 Asparagus stalks

10 slices sandwich bread, crusts removed, cut in half

1/4 cup shredded cheddar cheese

1 cup milk



Bring milk and cheese to a boil and stir to melt cheese.



Use a rolling pin to flatten the bread halves.  Use a basting brush to brush a light coat of the cheese mixture onto the bread halves.



Cut the asparagus stalks into halves.  Place 1/2 stalk on bread and roll it around the stalk.



Place on a baking sheet and bake at 350 for 10 minutes. </description>

1 pound dried black eyed peas (soak ahead of time)

1 1/2 cups diced celery

2 medium onions, diced

1 medium green bell pepper, diced

1 medium red bell pepper, diced

2 cloves garlic, minced

3 tablespoons vegetable oil



Cook all ingredients but black eye peas until tender, but not brown.



Drain ingredients and add peas along with 10 cups cold water.

			<description>This is one of my favorite things to cook, and it is a good substitute for a meat dish.



Ingredients: 

1 portobello mushroom cap

1 cup spinach leaves

1/8 cup sundried tomatoes

1/8 cup feta cheese

3-4 Kalamata olives, pitted and chopped



Saute the spinach leaves, tomatoes, and olives.  Remove from heat and add in feta cheese.  



Place mixture on top of mushroom cap and then bake at 350 or grill until the mushroom begins to release juices! </description>
